Shepherds Pie

Yesterday I made my version of a  Shepherds Pie that I originally found at Hillbilly Housewife. It was so delicious and had a hint of tomato that I found to be yummier usual.

 

 

 

 

 

 

 

 

 

Ingredients:

  • 2 T butter
  • 1 lb ground lean turkey
  • 1 medium onion chopped
  • 2 eggs- beaten
  • 1/2 tsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/4 tsp pepper
  • 16 oz frozen mixed vegetables (peas, carrots, corn etc)
  • 4 cups garlic mashed potatoes
  • 6 oz tomato paste
  • 1 can cream of mushroom soup
  • 1/2 tsp thyme
  • sprinkle of cheddar cheese

Directions:
  • Make mashed potatoes, or use instant kind and pre-heat oven to 400 F
  • Mix Eggs, meat, worcestershire sauce, onions and seasonings together and cook in large skillet over medium heat
  • Add vegetables, tomato paste and cream of mushroom soup to skillet and stir
  • Cover skillet and let vegetables cook through (approx.  10-15 min)
  • Put meat and vegetable mixture into a 9 x 13 glass dish, top with potatoes and sprinkle with cheese
  • Cook in oven at 400 F for 15 minutes
