Getting Ready for Valentine’s Day!

St. Valentine’s Feast Day is coming up!  In the past I never loved the holiday, but I seem to have found some new appreciation for it. It celebrates a saint, love for friends and family and kids get to give out adorable valentines to all their friends at school. Here are a couple of ideas to celebrate:

Valentine’s Day Cookie Recipe:

This is my grandma’s butter cookie recipe. It’s simple, not too sweet, just perfect for this kind of cookie!

Ingredients:

  • 1 1/2 level cup flour
  • 1/2 cup butter
  • 3/4 cup powdered sugar
  • 1 egg yolk
  • 1/2 tsp salt
  • 1 tsp vanilla

1. Place all ingredients in mixing bowl and mix until a putt-like consistency is obtained.

2. Refrigerate for a couple of hours.

3. Roll dough out and cut with cookie cutters

4. Bake 8-10 minutes at 350 degrees, until edges are brown

5. Cool, then frost if desired. I used this recipe for icing!


Week 1 Dinner Menu

In: This Week’s Dinner Menu.

How many of you can never figure out what’s for dinner tonight? Well, in this section I will share this week’s recipes for my family’s home. Now, I have just started doing this, so there may be some bumps in the road. I typically will plan for 5 meals. The other 2 will either be left overs or eating out.

Quick Chicken Stir Fry

Here is a quick meal idea. I am currently looking for a better recipe, but for now this will do.

Ingredients:

  • 1 tbsp red wine vinegar
  • 1 lb skinless chicken breast (cubed)
  • 2 tbsp teriyaki sauce
  • 1 tsp sugar
  • 1/2 tsp ginger
  • 1 tsp garlic powder
  • 1/8 tsp cayenne pepper
  • 28 oz frozen stir fry vegetables ( mushrooms, beans, broccoli, etc)
  • 1 cups of brown rice
  • 1 tsp oil ( sesame or vegetable)
Directions:
  • Cook rice according to directions.
  • mix red wine vinegar, sugar, teriyaki, and spices into a small bowl.
  • Place large cubes of chicken into skillet with oil and half of mixture in bowl.
  • Cook thoroughly
  • Add in frozen vegetables and remaining sauce mixture
  • cook until vegetables are tender
  • Add in cooked rice, mix and cook for 2-5 more minutes.
  • Serve!

Meatball Sandwiches

We tried some meatball sandwiches that I found at All Recipes last night. I of course, made a few changes to add in a few more vegetables and to make it my own. They were amazing! Here is what I did:

 

 

 

 

 

 

 

 

 

 

Ingredients:

  • 1 batch of the pizza/ marinara sauce
  • 1 green bell pepper
  • 1 large onion
  •  1 lb ground beef
  • 3/4 cup of italian bread crumbs
  • 2 tsp italian seasoning
  • 4 cloves of garlic
  • 2 tsp dried parsley
  • 2 tbsp grated parmesan cheese
  • 1 egg beaten
  • 1 french baguette
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 4 slices of swiss cheese
  • salt to taste
Directions:
  • Preheat oven to 350 F
  • put half onion into food processor and pulse until almost liquid
  • In bowl mix processed onion, bread crumbs, beef, egg, parmesan cheese, seasoning, 1/3 cup of the sauce and garlic together by hand.
  • Form into 25-35 meatballs and place on pan
  • Bake for about 15-20 minutes
Meanwhile:
  • Slice remaining onion and the green pepper into strips and keep marinara sauce hot  on the stove
  • Put into skillet with the olive oil over medium heat and saute until soft (then crispy if you like it that way)
  • Cut baguette half lengthwise and then into 4 buns
  • Transfer cooked meatballs onto the banquettes, spoon some sauce over them and top with cooked onions, peppers and a slice of cheese
  • place back into oven until cheese has melted and bread is slightly toasted

Shepherds Pie

Yesterday I made my version of a  Shepherds Pie that I originally found at Hillbilly Housewife. It was so delicious and had a hint of tomato that I found to be yummier usual.

 

 

 

 

 

 

 

 

 

Ingredients:

  • 2 T butter
  • 1 lb ground lean turkey
  • 1 medium onion chopped
  • 2 eggs- beaten
  • 1/2 tsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/4 tsp pepper
  • 16 oz frozen mixed vegetables (peas, carrots, corn etc)
  • 4 cups garlic mashed potatoes
  • 6 oz tomato paste
  • 1 can cream of mushroom soup
  • 1/2 tsp thyme
  • sprinkle of cheddar cheese

Directions:
  • Make mashed potatoes, or use instant kind and pre-heat oven to 400 F
  • Mix Eggs, meat, worcestershire sauce, onions and seasonings together and cook in large skillet over medium heat
  • Add vegetables, tomato paste and cream of mushroom soup to skillet and stir
  • Cover skillet and let vegetables cook through (approx.  10-15 min)
  • Put meat and vegetable mixture into a 9 x 13 glass dish, top with potatoes and sprinkle with cheese
  • Cook in oven at 400 F for 15 minutes

Spicy BBQ Meatloaf

This weekend I tried a wonderful recipe by Serenebeader at All Recipes. It was wonderful! J, C and I all loved it, so I had to share it with all of you. It is a more manly version of meatloaf :).

Ingredients:

  • 2 Eggs
  • 1/3 cup hickory flavored BBQ sauce
  • 2 cloves of garlic minced
  • 2 Chipotle chilies in Adobe sauce minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp celery salt
  • 1/2 tsp ground cumin
  • 1Tbsp Worcestershire sauce
  • 1 onion chopped
  • 3/4 cup dry oatmeal
  • 1.5 lb ground beef
  • 2 tbsp hickory flavored BBQ sauce
Chiles in Adobe Sauce
Directions:
  • Preheat oven to 350 F and spray 9 x 5 loaf pan with cooking spray
  • whisk eggs in large bowl
  • combine all ingredients in bowl except last 2 tbsp of BBQ sauce
  • knead with hands and form into the shape of a loaf
  • place loaf in pan and cover with last 2 tbsp of BBQ sauce
  • bake in oven for about 1 hour or until meat is cooked through


Hope you all enjoy this as much as we did!

To make it a little more inexpensive: eliminate the chiles and add a little red pepper flakes, cut down the beef and add more oatmeal

Homemade Sausage and Veggie Pizza

General Ingredients:

–      2 Bell Peppers- Chopped

–      1/2 lb sausage with casing removed- cooked

–      1 cup of spinach

–     2 cups shredded mozzarella or italian mixture cheese

–      Pizza Crust, 2-8 in rounds (recipe)

–     Pizza Sauce- 24 oz (recipe)

Directions: 

  • Pre-heat oven to 400 F
  • Sautee spinach in pan over medium heat until shriveled looking
  • Spread sauce over the 2 pre-made pizza crust
  • cover sauced pizzas with spinach
  • spread cheese on pizzas- leaving a little extra
  • top with pre-cooked sausage and chopped bell pepper
  • spread remaining cheese over the top
  • cook in oven oven for about 15 minutes
Note: Feel free to use store bought pizza crust and sauce to save time!

Spicy Pizza Sauce

Sauce Ingredients( original recipe I altered found here):

–       24 oz canned tomato sauce

–      5 Tbsp grated parmesan cheese

–     3 Tsp minced garlic

–     1/2 cup onions

–     3 Tbsp sugar

–     1/2 tsp dried oregano

–     1/2 tsp dried marjoram

–    1/2 tsp dried basil

–    1/2 tsp black pepper

–     1/8 tsp cayenne pepper

–    Tbsp Olive Oil

Directions:

–      Puree garlic and onions in food processor

–      Heat olive oil over medium-high heat in sauce pan then add pureed mixture

–      Sauté until translucent

–     Add in all over ingredients and bring to boil

–     Turn heat down to low and let simmer for at least 30 minutes

Garlic Pizza Dough

Dough Ingredients:

–       ¾ cup whole wheat flour

–       1 ¾ cup of all-purpose flour

–       1 cup warm tap water

–       1 package of yeast

–       1 tsp sugar

–       1 tsp garlic salt

–      Garlic juice from jarred garlic

–       1 cup extra of all purpose flour for kneading and rolling dough

–       2 Tbsp olive oil

Directions

–       Preheat oven to 400 F

–       Dissolve the yeast in the warm water in a large mixing bowl (10 min)

–       Mix in the flours, salt and sugar

–       Use the extra flour (spread out of flat surface) to knead dough (10 min)

–       Spread oil over ball of dough and place back into the bowl cover for hour

–       Then punch down dough and separate into two balls

–       Roll them out the size of the pan and place in pan

–       Dip paper towel into juice from jarred garlic and use it to spread over the uncooked dough

–       Cook them for 10 minutes or until almost crispy

–       Spread toppings

–       Bake in the oven for about 15 more minutes
