Here is what we are eating this week:

Monday: Turkey and Polenta Casserole- Trying out a new recipe

Tuesday: Take out Thai Food: Happy Valentine’s Day to us 🙂

Wednesday: Bean and Veggie Quesadillas

Thursday: BBQ Meatloaf

Friday: Indian Chicken Rice Casserole- Trying out a new recipe

Saturday: Breakfast for dinner: Pancakes and eggs

Sunday: Most likely dinner with my parents

Meatball Sandwiches

We tried some meatball sandwiches that I found at All Recipes last night. I of course, made a few changes to add in a few more vegetables and to make it my own. They were amazing! Here is what I did:

 

 

 

 

 

 

 

 

 

 

Ingredients:

  • 1 batch of the pizza/ marinara sauce
  • 1 green bell pepper
  • 1 large onion
  •  1 lb ground beef
  • 3/4 cup of italian bread crumbs
  • 2 tsp italian seasoning
  • 4 cloves of garlic
  • 2 tsp dried parsley
  • 2 tbsp grated parmesan cheese
  • 1 egg beaten
  • 1 french baguette
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 4 slices of swiss cheese
  • salt to taste
Directions:
  • Preheat oven to 350 F
  • put half onion into food processor and pulse until almost liquid
  • In bowl mix processed onion, bread crumbs, beef, egg, parmesan cheese, seasoning, 1/3 cup of the sauce and garlic together by hand.
  • Form into 25-35 meatballs and place on pan
  • Bake for about 15-20 minutes
Meanwhile:
  • Slice remaining onion and the green pepper into strips and keep marinara sauce hot  on the stove
  • Put into skillet with the olive oil over medium heat and saute until soft (then crispy if you like it that way)
  • Cut baguette half lengthwise and then into 4 buns
  • Transfer cooked meatballs onto the banquettes, spoon some sauce over them and top with cooked onions, peppers and a slice of cheese
  • place back into oven until cheese has melted and bread is slightly toasted

Shepherds Pie

Yesterday I made my version of a  Shepherds Pie that I originally found at Hillbilly Housewife. It was so delicious and had a hint of tomato that I found to be yummier usual.

 

 

 

 

 

 

 

 

 

Ingredients:

  • 2 T butter
  • 1 lb ground lean turkey
  • 1 medium onion chopped
  • 2 eggs- beaten
  • 1/2 tsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/4 tsp pepper
  • 16 oz frozen mixed vegetables (peas, carrots, corn etc)
  • 4 cups garlic mashed potatoes
  • 6 oz tomato paste
  • 1 can cream of mushroom soup
  • 1/2 tsp thyme
  • sprinkle of cheddar cheese

Directions:
  • Make mashed potatoes, or use instant kind and pre-heat oven to 400 F
  • Mix Eggs, meat, worcestershire sauce, onions and seasonings together and cook in large skillet over medium heat
  • Add vegetables, tomato paste and cream of mushroom soup to skillet and stir
  • Cover skillet and let vegetables cook through (approx.  10-15 min)
  • Put meat and vegetable mixture into a 9 x 13 glass dish, top with potatoes and sprinkle with cheese
  • Cook in oven at 400 F for 15 minutes
